AGAR-AGAR

Agar-agar is a gelatinous substance derived from red algae that has been popular across Asia for centuries. It is derived from plants thus making it suitable for use by vegetarians or vegans as a substitute for gelatin. Agar-agar is white and semi-translucent powder which has no taste or odor, thus it can safely be used in desserts and other products without altering the taste or smell. It sets more firmly than gelatin and can even set at room temperature. Agar-agar acts as a thickening agent, gelling agent, emulsifier and stabilizer. Agar-agar gives a sensation of fullness, leading it to be used in some diet products. It can also be used as a laxative.
